Buttermilk Coconut Pie
1 1/4 cup sugar
2 TBS all purpose flour
1/2 cup melted butter
3 eggs beaten
1/2 cup buttermilk
1 tsp vanilla
3 1/2 cup flaked coconut, divided
1 unbaked 9" pie shell
Combine sugar and flour in large bowl.
Add melted butter, eggs, buttermilk, vanilla and 2/3 of the coconut
Mix well and pour mixture into pie shell. Sprinkle with remaining coconut
Bake at 325 degrees for 1 hour or until set.
