Christmas Pecan Cookies

1 1/4 cup confectioners sugar - sift and divide
1/2 cup butter or margarine, softened
1 teaspoon pure vanilla extract
1 cup sifted all-purpose flour
1/8 teaspoon salt
1 cup finely chopped pecans


In a mixing bowl, cream 1/4 confectioners sugar and butter until smooth.
Add vanilla and blend well.
Add flour and salt, blend well.
Stir in the pecans. Wrap dough in wax paper and refrigerate for 1 to 2 hours.
Preheat oven to 350°.

Lightly grease a large baking sheet.
Shape dough into 1/2 inch balls and place on prepared baking sheet.
Bake 12-15 minutes. Keep a close eye on these... remove when they are a very light brown.
While each cookie is still warm, roll each one in remaining cup of confectioners sugar.
Cool on wire rack and roll again in confectioners sugar.
Store in airtight container
