FRUIT SALAD
(Use any or all of these fruits as desired)
Bananas, cut into bite size pieces
Oranges, cut into bite size pieces
Pears, sliced
Peaches, sliced
Apple
1 cup seedless grapes, (green, red, or 1/2 cup of each)
1 cup fresh blueberries
Fresh (or canned pineapple) chunks
Cantaloupe, cut into bite size pieces
Fresh Strawberries
Any amount of pecan pieces and coconut are optional... but oh so good!
Clean and prepare fruit and place in clear bowl or on a large serving platter.
Sauce
2/3 c. sugar
3 tbsp. flour
2 eggs, beaten
2 tbsp. salad oil
3 tbsp. lemon juice
4 tbsp. orange juice
1 c. pineapple juice
1/2 c. heavy cream, whipped
Combine sugar and flour in top of double boiler;
add remaining items except whipped cream.
Cook until thickened, stirring constantly.
When cool, fold in whipped cream. Makes 2 cups of dip.
