Holiday Fruit Bars
1 cup coarsely chopped pecans
3/4 cup sifted self-rising flour (divided)
1 cup chopped dates
3/5 cup chopped candied fruit
2 eggs
1 cup confectioners sugar
1/3 butter - melted
Confectioners sugar glaze (recipe below)
Preheat oven to 325°.
Combine nuts, 1/2 cup of flour, dates, and candied fruit in
a large mixing bowl, set aside.
In medium size bowl, beat eggs with an electric mixer until
thick.
Gradually beat in confectioner sugar.
Blend in butter and add remaining 1/4 cup flour; blend well.
Stir in fruit mixture. Pour in to well greased 9-inch square
baking pan.
Bake for 35 minutes or until toothpick inserted near the
center comes out clean.
Spread on confectioners sugar glaze while still warm.
Set pan on a wire rack and cool. Cut into serving piece.
Confectioners Sugar Glaze
1/2 cup confectioners sugar
2 1/2 teaspoon hot water
1.4 teaspoon almond extract
Combine all ingredients in a small bowl;
beat with wire whisk or electric blender until blended.
You may add a little more hot water if glaze seems too
thick.
