Potato Rolls

preheat oven to 425°

Ingredients

1 cup milk
2/3 cup shortening
2 1/2 teaspoons salt
1 cup hot mashed potatoes
1/2 cup sugar
1/2 cup lukewarm water
1 pkg. dry yeast
2 eggs, beaten
6-7 cups flour
Cooking spray
2 tbs. melted butter or margarine

Preparation

Scald milk & add sugar, salt, mashed potatoes, & shortening. - Cool to lukewarm.
Place yeast in lukewarm water.
Combine with milk mixture. Add beaten eggs.
Gradually add 3 cups flour and blend until smooth.
Add remaining flour to make a stiff dough.
Lightly spray a bowl with cooking spray & place dough in bowl.
Spray top of dough with cooking spray & cover with plastic wrap.
Chill in refrigerator until ready to use.
Will keep several days. When ready to use, preheat oven to 425°.
Shape dough into desired size and place on a greased pan.
Brush tops with melted butter.
Let set at room temperature until double in size.
Bake for 20 minutes or until brown.
