Crock Pot - Pulled Pork

1 tablespoon butter

3 pound boneless pork

2 tablespoons dry rub or Cajun seasoning

1 medium onion - chopped (optional)

5 cloves of garlic - minced

4 cups of water.

1 tablespoon liquid smoke

Cut pork roast into very large chunks.  Season with rub or seasoning.

Melt butter in large skillet over medium heat; add meat and brown on all sides, (sear outsides only).

Remove from skillet, allow to cool for about 15 minutes and place in a crock pot.

Place onion and garlic in skillet and cook until tender.

Stir in water and scrape bottom of skillet with a spatula to remove all the yummys off the bottom, stir in liquid smoke and pour over meat in crock pot.

Cook on high for about 6 hours, or until meat is falling apart.
