SOUTHERN FRIED CHICKEN

1 chicken, cut up
1/3 c. flour
1 tsp. light seasoned salt
1/2 tsp. paprika
1/4 tsp. poultry seasoning
1/4 tsp. onion or garlic powder
1/8 tsp. black pepper
Shortening or lard
Iron Skillet or Frying pan


Wash and cut-up chicken.
Combine flour and spices in a bowl or a plastic bag.
Roll or shake chicken, one to two pieces at a time, in seasoned flour.
Set aside on a plate or sheet of wax paper.
Coat all chicken with flour before heating fat.
Heat enough shortening to cover bottom of skillet, add chicken.
Brown over medium heat, about 10 to 12 minutes per side, until golden brown on all sides.
Cover and continue cooking over low heat for 30 minutes.
Remove cover, turn up heat and continue frying chicken until golden-brown, about 1 to 2 minutes.
