Shrimp Creole
 

1/4 cup butter or margarine

1 onion - diced

1/2 cup bell pepper - diced

1 clove garlic - minced

1 tsp salt

1/8 tsp black pepper

1/8 tsp dried rosemary

 

1/8 tsp paprika

2 cups canned tomato pieces

1 lb. fresh shrimp - cleaned

Tabasco sauce - optional

 

 

 

 

Melt butter in skillet, add onion, bell pepper, and garlic and saute for about 5 to 10 minutes or until tender.  Add salt, black pepper, rosemary, paprika and tomatoes.  Bring to a gentle boil, reduce heat and simmer for about 15 minutes.  Add shrimp and heat thoroughly, (shrimp will turn pink when done - do not over cook).

 

* Serve over steamed white rice

 

 

Steamed Rice

4 cups water

salt - to taste

1 cup long grain white rice

 

 

Bring water to a boil, add desired amount of salt and boil for 20 minutes.  Drain and serve.
