Summer Squash Casserole
 

2 lbs yellow squash

1 stick butter or margarine - melted

1 med. onion chopped

1 tsp salt

pepper to taste

1 1/4 cup saltine cracker crumbs

1 1/4 cup grated mild cheddar cheese

1 egg

1/2 cup milk

 

Preheat the oven to  350°

Steam or boil squash until tender, drain off any excess water and mash.  Add salt, pepper, butter, onion, and 1 cup of the cheese and mix together; add 1 cup of the cracker crumbs.  Mix egg with milk and add to squash mixture.  Sprinkle remaining 1/4 cup of cheese and 1/4 cracker crumbs on top.  Bake in an ungreased casserole for 30-40 minutes.
