Strawberry Scones


 

1 cup fresh ripe strawberries

2 1/2 cups plain flour (do not sift)

3 Tbsp sugar

2 tsp baking powder

1/4 tsp salt

6 Tbsp butter

2/3 cup whole milk

 

 

Preheat oven to 425°

 

Wash and slice berries, set to the side.  In a large mixing bowl, combine flour, sugar, baking powder, and salt.  Using a pastry blender, (or two knives), cut butter into flour mixture until it looks like small crumbles.  Add Strawberries and toss until all berries are coated.  Add all the milk at one time and and toss lightly until mixer holds together; with floured hand gently form into a ball.  Roll out onto a well floured surface with a floured rolling pin until about 1/2 inch thick.  Using a floured biscuit cutter or glass, cut into circles.  Place on a well greased cookie sheet and bake for about 12 minutes.  Serve with whipped cream or butter.
